You’ll be surprised how easy it is to make this delicious BBQ jackfruit. It has a meaty texture that’s so similar to shredded pork even carnivores would be fooled! It’s quick and easy to make, plus it reheats well for future meals. You can serve this vegan jackfruit pulled pork on hamburger buns with a crisp, fresh coleslaw or just as it is.
The only ingredient this recipe requires that you don’t already have lying around is young green jackfruit canned in water or a salt brine. You can find it at any Asian market or online. This is important as it will give this dish the proper flavor and consistency of pulled pork.
Start by rinsing and draining the canned jackfruit, then tossing it in your seasonings. Next, place the jackfruit in a pan and add the sauce, then bring to a simmer and cook for 30 minutes. This will help the jackfruit absorb the sauce and cook down to achieve that shredded, pulled pork texture. You may need to stir it a few times throughout this cooking process to help the jackfruit get cooked evenly.
Once the jackfruit is finished, remove it from the heat and let cool. Using your hands or a fork, mash the jackfruit to achieve that pulled pork consistency. Taste for seasonings and add a bit more if needed, like paprika and ground cumin or garam masala. Add a squeeze of lemon juice and some light brown sugar for a sweeter flavor.
