Grilling gives this mild-mannered vegetable a spunky, smoky attitude that pairs beautifully with everything from grilled chicken breast and flaky salmon to steaks, burgers and other barbecued favorites. This zucchini side is ready in about 10 minutes and is perfect for a summer party or a weeknight family dinner.
The secret to this grilled zucchini recipe is to cut the squash into uniform slices about 1/3 inch thick. This ensures that they will grill evenly and won’t become mushy. Using a mandolin (affil link) or a sharp knife makes this easy, but be careful, you’ll want to wear a cut resistant glove!
Drizzle the zucchini with oil and season them with salt and pepper and garlic powder. Toss to coat evenly. Then grill for 1-3 minutes per size. Be sure to flip the zucchini carefully with a pair of tongs. The zucchini is done when a light char forms and it has reached your desired tenderness. If you like, brush generously both sides with Bachan’s Sweet Honey Barbecue Sauce and continue to grill for 30 seconds per side.
