When it comes to cooking beef briskets, it’s important to check it every 15 minutes. As the fat renders, the brisket becomes softer and pliable. If you leave it on the smoker for too long, it may overcook and become overdone. The best way to judge whether it’s done is to feel it loose and jiggly in your hands.
