Instant Pot Barbeque Lentils

Lentils are one of the best pantry staples to have on hand because they can be incorporated into so many different recipes. We love to tuck them into meatless chili, use them to make hummus, and even hide them in marinara sauce (#parentingwin). Plus, they cook up fast so they’re a perfect ingredient to turn your Instant Pot into an amazing meal machine.

These barbeque lentils are rich and smoky with a touch of sweet and tangy, and they can be served as either a side dish or main course. They’re also vegan and gluten free. You can serve them over a baked potato, on toasted bread or as a hearty vegetarian sloppy joe. Leftovers can be stored in the fridge and reheated later for an easy meal to take to work or school.

Depending on your taste preferences you can also add extra spices like cumin, ground coriander or chili powder to give the lentils more flavor. You can also add a splash of maple syrup or dark agave nectar to the recipe to give it a little more sweetness.
