If you are looking for an appetizer that is both delicious and healthy, I cannot recommend Barbeque Quail highly enough. Not only does this delicious entree offer a wonderful healthy alternative to fried chicken or ribs, it is also bursting with flavor and great nutritional value. In fact, the secret to its great taste lies in its crisp, golden brown crispy skin and melt in your mouth buttery eggplant. The secret to this healthy entree is made up of several different vegetables including: spinach, kale, dandelion greens, summer savory, yellow squash, eggplant, and zucchini.
To make this delectable dish you will need: 2 tablespoons of lemon juice, four tablespoons of olive oil, one teaspoon of garlic powder, and about one tablespoon of dry mustard. You can add the ingredients and mix them together until smooth and creamy. Then take a non-stick frying pan, heat it up to medium high, and allow your Quail to cook in one side of the pan while you watch them on the other side. Once done, turn the Quail over so that they are on the opposite side and cook for two minutes in an unadorned frying pan. This will allow the crispy, golden brown leaves to show through.
Serve Quail with a salad of mixed greens, cut vegetables, and a drizzle of balsamic vinegar and olive oil. To serve your salad, cut up six thin slices of red onion, and put them on the quail leaves. Top with a layer of cooked eggplant and dandelion greens, followed by a layer of chopped zucchini. Top with a drizzle of your favorite balsamic vinegar and olive oil, and enjoy your delectable barbeque. Appetizers are easy and delicious, especially when they are made with food from your own garden.
