Garlic, Rosemary and Thyme are the star ingredients in this simple savory marinade. If you prefer, paprika and Creole seasoning are excellent additions as well.
Olive Oil and Lamb Rub
Mix 2 tablespoons olive oil with the lamb rub until evenly distributed throughout a paste. Brush the paste onto your lamb chops then cover with cling film or transfer into a plastic storage bag and refrigerate to marinate for at least an hour (and up to overnight).
Prep before Grilling
Before cooking, remove the lamb chops from their marinade, pat them dry with paper towels, and place them on a rack over a clean kitchen towel. Set the rack in a pan, cover with aluminum foil and rest for 20-30 minutes before grilling.
Grill these smoky, flavorful lamb chops on a charcoal or gas grill for a juicy and tender meal. Cook on one side until rare, medium rare, or medium; then flip and cook for an additional 3-5 minutes on the opposite side until cooked through to your liking.
